Pad See Ew may be overshadowed by Pad Thai in the United States, but it reigns king in Thailand. The quick and easy noodle dish can be found on every street corner in Bangkok (it’s a very popular option for lunch).

Pad See Yew

Yields 1-2 servings

3 tablespoons canola or vegetable oil
1 clove garlic, coarsely chopped
¼ pound sliced pork loin
1 large egg
¼ pack of fresh noodle sheets, cut into half-inch strips and separated (found in the refrigerated section of the market)
1 ½ tablespoons fish sauce
1 tablespoon sugar
1 tablespoon dark sweet soy sauce (recipe recommends Kwong Hung Seng brand)
¼ pound Chinese broccoli, cut into 1-inch pieces

  1. Heat oil in a wok or large skillet over medium – high heat. Fry the garlic until lightly browned.
  2. Toss in the pork and stir-fry until almost cooked through.
  3. Crack the egg into the pan. When it begins to set, scramble it with the pork.
  4. Add the noodles, fish sauce, sweet soy sauce and sugar. Cook until the noodles absorb the sauce.
  5. Add the broccoli. Cook until broccoli leaves are wilted and the stems are slightly tender.
  6. Serve with white pepper powder and sliced pickled jalapenos and season to taste.
